Welcome to our newsletter!
On behalf of Lotus Garden Meditation Center, I'd like to wish you a Happy and Healthy New Year.
Nestled in the heart of Carmichael, Lotus Garden Meditation Center is located on 2 acres, amidst Japanese gardens, waterfalls and organic farming.

Recipe of The Month
Harvest
Butter Nut Squash Soup
2 Tbsp Butter or olive oil
1 small Onion, chopped
1 stalk Celery, chopped
1 medium Carrot, chopped
2 medium Potatoes, cubed or 1 potato and one small yam
1 medium Butternut Squash, peeled, seeded and cubed 1 (32 fluid oz) container
Trader Joe's Vegetable Broth or Mock Chicken Stock*
Salt and freshly ground
Black Pepper to taste
Melt the butter in a large pot, and cook the onion, celery, carrot, potatoes, yam and squash for 5 minutes or until lightly browned.
Pour in enough vegetable broth to cover vegetables (or if using mock chicken stock, just pre-mix powder and water so it's ready to pour in pot).
Bring to a boil. Reduce heat to low, cover pot, and simmer for 40 minutes or until all vegetables are tender.
Transfer the soup to a blender and blend until smoothe.
Return to pot and mix in any remaining stock to attain desired consistency. Season with salt and pepper.
Serves 4

*A flavorful powder found in bulk section at most Health Food Stores. Also "McKay's ock "Chicken Style" Instant Broth & Seasoning" is available in a 12 oz. jar (for 32 oz. of stock, just need 4 teaspoons powder to 4 cups of water).

Margaret has been a vegetarian for over 16 years. She has lived most of her life in Australia where she was born, and the last 10 years in Portugal. With a passion for cooking, she began teaching vegetarian cooking 3 years ago at community centers, private homes and restaurants. Margaret is also working on a degree in diet and nutrition to help people deal with issues relating to diet and illness and to improve health.
Carol
Carol Lent has been teaching how to prepare "Meatless Menu's" for over 30 years.
Carol loves to help you learn to prepare quick, easy and healthy meals for yourself and your family. Having also taught how to make "Healthy Snacks" in classrooms with student participation for over 20 years, Carol assures us her recipes are fun as well as delicious.

Vegetarian diets are also high in complex carbohydrates, fiber and low in fat - the best prescription for managing diabetes.
Cancer Prevention
Vegetarian diets help protect against cancer because vegetarians usually eat more plants containing cancer fighting phytochemicals i.e., betacarotene and lycopene which helps to explain why Vegetarians have low rates of lung and prostate cancer.
Easy Vegetarian Substitutes
If your typical lunch is:
Turkey sandwich Substitute with vegenaise, lettuce, cheese slices, veggie turkey slices, and cranberry sauce.
Hamburger Substitute the pattie with a veggie burger pattie.
Beef Burrito Substitute with ground beef substitute, seasoned tofu, beef style seitan strips, lettuce, tomato and onion.
